Goat Cheese and Spinach Quiche

One of my favorite quick and easy yet comforting meals: you will love this crispy and delicious quiche!


2-4 servings

Ready in 35 minutes



Ingredients (ideally organic):

  • 1 round puff pastry dough, preferably with butter or olive oil as fats

  • 300-500g chopped frozen spinach, depending on dough size

  • 150g (1 box) fresh goat cheese, for instance Chavroux

  • Freshly ground salt and black pepper

  • Pinch of turmeric


Directions:

  1. Preheat the oven at 180°C.

  2. Optional: for a crispier dough, unroll it in a round baking dish, roll the edges, puncture the bottom with a fork and pre-bake it in the oven for 10-15 minutes.

  3. Warm up the frozen spinach in a pot. Add the condiments.

  4. Once the spinach is warm, stir in the goat cheese, making sure it melts and combines with the spinach. The filling should have a creamy consistency and it should not be too liquid.

  5. Transfer the filling on the dough and bake for 20-25 minutes. The edges should be golden brown.
