One of my favorite quick and easy yet comforting meals: you will love this crispy and delicious quiche!
Ready in 35 minutes
Ingredients (ideally organic):
1 round puff pastry dough, preferably with butter or olive oil as fats
300-500g chopped frozen spinach, depending on dough size
150g (1 box) fresh goat cheese, for instance Chavroux
Freshly ground salt and black pepper
Pinch of turmeric
Preheat the oven at 180°C.
Optional: for a crispier dough, unroll it in a round baking dish, roll the edges, puncture the bottom with a fork and pre-bake it in the oven for 10-15 minutes.
Warm up the frozen spinach in a pot. Add the condiments.
Once the spinach is warm, stir in the goat cheese, making sure it melts and combines with the spinach. The filling should have a creamy consistency and it should not be too liquid.
Transfer the filling on the dough and bake for 20-25 minutes. The edges should be golden brown.
